Where do lettuce seeds come from?

In lettuce there are no seeds, so how are heads of lettuce planted?

The part you eat is actually leaves of lettuce. The flowers come later (the lettuce is said to have "bolted", and the seeds develop in the fruits, which come from the flowers.
